Chimichurri

At the Toronto Fall Home Show we were overwhelmed by all the positive attention and enjoyed every moment of meeting so many lovely, enthusiastic people. Oleh and her husband spent a good while dreaming with us and sharing ideas. Before they left for the day Oleh promised me her recipe for Chimichurri, something I had honestly never heard of but sounded mouth watering. Sure enough we arrived home to find this little gift in the Grow For You Inc. In box. During our conversation we all agreed that sharing is a personal joy - so I asked and Oleh answered "yes, please share!"
Without further ado...

CHIMICHURRI
11/2 cups finely chopped Italian parsley
6 large cloves garlic, chopped finely
2 tsp dried oregano
¼ to ½ red pepper flakes
1tsp fresh ground pepper
Salt to taste
¼ cup olive oil
2/3cup white vinegar
Wash parsley under hot water.
Add garlic and parsley to food processor. Process until finely minced but not pureed.
Scrape into bowl. Stir in remaining ingredients. Adjust seasoning. Let stand at least 30 minutes to let flavors meld.
Use contents for seasoning for chicken or beef, to be cooked in oven.
(Extra sauce will keep in a tightly sealed jar on the counter for up to a week or two)
